Our only rule is that we must understand the wines to showcase them in both our blended champagnes and single-parcel cuvées.
We use oak casks in which malolactic fermentation is not a foregone conclusion. We let the wines decide for themselves.
During ageing, the fine lees in the bottle transform, adding richness to our developing champagnes.
After disgorgement, we add a dosage of natural liqueur to allow full expression of the fruit, potency and elegance in our cuvées.
